Can cats eat Sausages?

No — dangerous

No. UK sausages are very high in salt and fat, and usually contain onion, garlic, sage, or other alliums/herbs cats shouldn't have. Raw sausages also carry salmonella and E. coli risk.

What's the full picture?

Commercial UK sausages (Richmond, Walls, supermarket own-brand) contain sodium, nitrates, and usually some form of allium seasoning. A single sausage exceeds a small cat's daily sodium limit several times over.

Cumberland, chorizo, and chipolata variants have different seasonings but share the same core problems — often with added paprika or chilli, which are further concerns.
